Makes 1 breakfast sandwich

1 egg
3 slices honey-cured center-cut
hardwood smoked bacon
1 slice cheddar cheese
1 slice Swiss-American cheese
1 brioche bun, split
Quick & Easy Breakfast Sauce*
¼ avocado, sliced
3 slices tomato
6 cooked tater tots

Using a griddle, fry egg and cook bacon. Melt cheese pieces atop cooked egg.
Toast brioche pieces on griddle. Spread breakfast sauce (recipe below) on both sides of bun. Layer remaining ingredients inside bun and serve immediately.

*Quick & Easy Breakfast Sauce

¼ cup olive oil mayonnaise
3 Tbsp. ketchup
1 tsp. vinegar

Combine all ingredients in a bowl and stir until well blended.
